Today I came home from the
gym STARVING!! To remedy this, I went to
one of my standards: Rad Post Workout Egg White and Veggie Scramble. I paired mine with some fresh fruit and half
a whole wheat english muffin. The best
thing about this recipe is you can substitute in any veggies you have in your
fridge/freezer: onions, mushrooms, tomatoes, squash, sweet potatoes, kale,
cabbage, etc. Your options are endless!
Below is what I had in the fridge today…
Ingredients:
- 1-2 sprays of Olive Oil Cooking Spray
- ½ cup Chopped Bell Peppers
- 1 cup Chopped Spinach
- ½ cup Sliced Zucchini
- ¾ cup Egg Whites (or the Whites from 4 Large Eggs)
Directions:
- Place a small skillet on the stove and turn heat to medium, spray a small amount of Olive Oil Cooking Spray in the skillet.
- Add the peppers and spinach to the pan and cook until slightly soft.
- Add Zucchini to the pan and cook until slightly soft.
- Add egg whites to pan. Using a heat resistant rubber scrapper or a wooden spoon, scrape the eggs off the pan and toward the center. Keep moving the eggs around until they are fully cooked.
- Serve with hot sauce, salsa or just as is!
