This
recipe is so easy to make and so yummy!
Ingredients:
- 1 tablespoon olive oil
- 2-4 teaspoons chili garlic sauce
- 1 bell pepper sliced in thin strips
- 10 baby carrots sliced in thin strips
- 1 package of firm tofu cut into cubes
- 3 cups chicken broth
- 1 package of Shirataki noodles rinsed
- 1 1/2 cups coconut milk
- 1/ bunch of cilantro roughly chopped
Directions:
- Add olive oil, chili sauce, bell peppers, & carrots to a pot on medium heat. Cook for 3-5 minutes, until carrots are a little soft.
- Add tofu and mix well.
- Add chicken broth, turn heat to medium-high, and bring to a boil.
- Add coconut milk, noodles and 3/4 of the cilantro and bring to a boil.
- Serve with the remaining cilantro as a garnish!
