Rad Dairy Free Egg Bites




Ingredients
  • 8 pastured eggs 
  • 3 TB almond milk 
  • 2 TB organic olive oil 
  • 1/2 tsp aluminum free baking powder 
  • 1 tsp sea salt 
  • Pepper to taste 
  • About 2 handfuls of fresh spinach chopped 
  • 18-20 cherry tomatoes 
Instructions
  1. Pre-heat oven 375 degrees F. 
  2. Grease muffin tin with oil spray. 
  3. Chop spinach and cherry tomatoes and evenly distribute into each cup of the muffin tin. 
  4. Beat the eggs, milk, olive oil, baking powder, salt, and pepper in a small mixing bowl. 
  5. Pour the egg mixture over the spinach and cherry tomatoes. 
  6. Bake in a 375 degree F oven for 20-25 minutes. 
  7. Let cool completely and then package in two's or three's for breakfast for your week. Keep in the refrigerator - these will last 1-2 weeks. Enjoy!

Rad Pumpkin Spice Sugar Free Muffins












Ingredients

· 1 ⅓ cup all purpose flour
· ¾ tsp baking soda
· ¾ tsp baking powder
· 1 tsp pumpkin pie spice
· ¼ tsp salt
· 2 large eggs
· ½ cup almond milk
· ¼ cup honey
· 3 TBSP coconut oil (melted)
· 1 tsp pure vanilla
· ½ cup pureed pumpkin


Instructions
  1. Pre-heat oven to 350 degrees F.
  2. Line a muffin tin with baking cups or spritz with oil spray. 
  3. In a medium bowl, combine flour, baking soda, baking powder, pie spice, and salt and mix.
  4. In a larger bowl, combine lightly beaten eggs with almond milk, honey, melted coconut oil (let cool), vanilla and pumpkin. Whisk until incorporated.
  5. Slowly add the flour mixture into the egg mixture.
  6. Once the mixture is just combined, scoop into muffin cups, filling each about halfway.
  7. Bake at 350 degrees F on the center rack for approximately 14-16 minutes, inserting a toothpick into the center to check for a fluffy, full-cooked interior.
  8. Remove muffins from tray and allow to cool on a wire rack or paper towel until they're cool enough to eat!
  9. Store the extras in the refrigerator, they will keep for 1-2 weeks!

Rad Super Simple and Healthy Spicy Thai Coconut Soup

This recipe is so easy to make and so yummy!

Ingredients:
  • 1 tablespoon olive oil
  • 2-4 teaspoons chili garlic sauce
  • 1 bell pepper sliced in thin strips
  • 10 baby carrots sliced in thin strips
  • 1 package of firm tofu cut into cubes
  • 3 cups chicken broth
  • 1 package of Shirataki noodles rinsed
  • 1 1/2 cups coconut milk
  • 1/ bunch of cilantro roughly chopped


Directions:
  • Add olive oil, chili sauce, bell peppers, & carrots to a pot on medium heat. Cook for 3-5 minutes, until carrots are a little soft.
  • Add tofu and mix well.
  • Add chicken broth, turn heat to medium-high, and bring to a boil.
  • Add coconut milk, noodles and 3/4 of the cilantro and bring to a boil.
  • Serve with the remaining cilantro as a garnish!

Rad Post Workout Egg White and Veggie Scramble

Today I came home from the gym STARVING!!  To remedy this, I went to one of my standards: Rad Post Workout Egg White and Veggie Scramble.  I paired mine with some fresh fruit and half a whole wheat english muffin.  The best thing about this recipe is you can substitute in any veggies you have in your fridge/freezer: onions, mushrooms, tomatoes, squash, sweet potatoes, kale, cabbage, etc. Your options are endless!  Below is what I had in the fridge today…



Ingredients:
  • 1-2 sprays of Olive Oil Cooking Spray
  • ½ cup Chopped Bell Peppers
  • 1 cup Chopped Spinach
  • ½ cup Sliced Zucchini
  •  ¾ cup Egg Whites (or the Whites from 4 Large Eggs)




Directions:

  • Place a small skillet on the stove and turn heat to medium, spray a small amount of Olive Oil Cooking Spray in the skillet.
  • Add the peppers and spinach to the pan and cook until slightly soft.
  • Add Zucchini to the pan and cook until slightly soft.

  • Add egg whites to pan.  Using a heat resistant rubber scrapper or a wooden spoon, scrape the eggs off the pan and toward the center.  Keep moving the eggs around until they are fully cooked.

  • Serve with hot sauce, salsa or just as is!
  • Enjoy!!

Rad Blueberry Coconut Healthy Cookies



Ingredients:
  •         2 Past Their Prime Bananas
  •          1 cup Steel Cut Oats
  •          ¼ cup Shaved Coconut
  •          ½ cup Fresh Blueberries (Other berries or dried fruit would work also)


Directions:
  •          Preheat oven to 350°.
  •          In a large bowl mash bananas.
  •          Add oats and coconut and mix well.
  •          Add blueberries and fold into batter.

  •          Scoop tablespoon amounts onto cookie sheet.

  •          Bake for 15 minutes until golden brown.
  •          Enjoy!!

Rad Sunday French Toast





Ingredients:
  •         ½ cup Liquid Egg Whites
  •          1 Egg
  •          ¼ cup Almond Milk
  •          1 teaspoon Vanilla Extract
  •          6 slices Sprouted Whole Wheat Bread
  •          No Salt added Peanut Butter for topping

We LOVE Costco...can you tell?

















Directions:
  •          Mix egg whites, egg, almond milk and vanilla extract in small mixing bowl with a fork or whisk.
  •          Dip each slice of bread in the egg mixture, ensuring that both sides are moist.
  •          Place the slices on a hot skillet cooking each side until golden brown.
  •          Remove from skillet and serve with peanut butter.
  •          Enjoy!!

Introduction and Welcome

Hello internet world, we are the “Rad” family. After my husband and I got married we were on the Honeymoon diet for a little too long, and well, got fat.  One morning I woke up tired and fat for the last time.  Nothing fit that morning, so we decided to change the way we live.  Our diets changed significantly from eating out 5+ times a week to cooking at home most days and watching the ingredients we put in our bodies.  We started with an Advocare 24 Day Challenge and felt better than we ever had.  We had more energy and a smaller waist line!  We have continued with the Advocare products and most importantly continued with our healthy lifestyles.
